Romagna is a region that excels in charcuterie, and one of its most outstanding products is “Salsiccia passita”, a traditional sausage made from theheavyweight Italian pig. The first step in the production of Primizia is the selection of the pork cuts – shoulder and belly – which are seasoned with salt, pepper, fresh garlic and wine. The result is a sausage with a delicately sweet flavour that's easy on the palate and equally suitable as a starter or as a main course, accompanied by a hearty Sangiovese wine and some traditional Romagna piadina flatbread.
