A traditional salami from the southern region of Abruzzo, Ventricina is made from selected coarsely-ground pork seasoned with salt, pepper, chilli and paprika. The result is a salami with a distinctive red colour, coarse texture and an utterly unique flavour which is agreeably spicy but well balanced. Ventricina makes a wonderful snack served with toasted bread seasoned with a little garlic and oil. To accompany, a well-structured red wine.
