The practicality of a boneless ham and the preservation of a ham with bone

Each San Valentino is freshly boned before the curing process, which allows a greater evaporation of moisture from the meat, thus maintaining a consistently high quality. If it was not produced using only Italian pigs bred according to the regulations governing P.D.O.s (Protected Designation of Origin), it wouldn't be a San Valentino.
